Coffee beans, as you know, are the seeds of a small cherry-like fruit. When first harvested and removed from cherries, they are hard, dense, and green in color.
If you were to try to prepare these green coffee beans as roasted coffee, the result would be unrecognizable and gross. Before roasting, the coffee beans have a very vegetal and "green" flavor. They are also so dense that most grinders couldn't break them into smaller pieces. Not very good for making coffee.
Roasting coffee beans breaks down the cell structures of the beans and extracts the moisture they contain to grind them. Roasting also initiates a series of complex chemical reactions that create the rich flavors we love in coffee, whether it's fruity and floral notes or deeper hues of chocolate and caramel.
Why We Use Large Coffee Roasters
Here's the thing: it is possible to roast coffee in a frying pan, over a fire or in the oven. In fact, it has been done that way for hundreds of years. However, these methods fall short in some dramatic ways, resulting in an unpleasant, unbalanced taste.
The greatest weakness of these methods is the lack of control. Roasting specialty coffee generally requires a specific temperature rise throughout the entire process. There is leeway for different techniques and styles, but on the micro level. Pans and ovens cannot allow this level of control or precision.
Another drawback of these methods is the fact that they cannot roast the beans evenly. The pans are hot, but the air around them is not. Baking distributes the heat a little more evenly, but you can't stir the beans without lowering the temperature. Unevenly roasted beans are not tasty beans.
Large commercial roasters continually chuck the beans to make sure they are evenly roasted. They also give us a very high degree of control over temperature. For delicious specialty coffee, they are the way to go.
5 main chemical reactions inside beans
There are thousands of chemical reactions that take place during coffee roasting, but we'll focus on the big five and how they develop the unique flavors of coffee.
During the first few minutes of roasting, the beans heat up, actually expand in size, turn a roasted yellow color, and begin to smell like toast or popcorn. And then comes the good stuff.
The old way of roasting coffee used to bring the beans to the second crack, but that's less so among specialty coffee roasters. Most beans reach a better stage of balance, sweetness, and flavor between the first and second cracks (around a medium roast).
And those super dark, oily beans that taste like ash and bitterness? Those are roasted past the second crack stage. We never roast coffee this far; generally, destroys all good and interesting flavors.
We just bring out the best and most satisfying flavors we can when we grill. Sometimes it is a light or medium roast, but we also have a couple of darker options.

Yes, you heard that the right coffee was first discovered by a goat! More specifically, a young goat herder named Kaldi in the 9th century. He noticed that his goats behaved strangely when they ate the cherries from the coffee tree, so he tried it for himself. This story doesn't appear in writing until the 16th century, but I like the story and it sounds very plausible.
# 2 - It's not just at Starbucks.
In today's coffee pop culture, the Starbucks brand has become synonymous with the word coffee in many circles and has become an icon in some people's minds to the point of insanity. Maybe I'm being a bit dramatic, but the fact is, some of the best coffees I've ever tasted have come from little coffee roasters that you may never have heard of in your life. So with that in mind, the next time you're looking for coffee in an area you're unfamiliar with, try looking for the word "coffee" on your smartphone map instead of the "Starbucks" brand.
# 3 - Light has more caffeine than dark.
Contrary to popular belief, Dark roast coffee beans has less caffeine than Light roast coffee. The reason for this is that the longer the coffee is roasted, the more caffeine is extracted from the bean. I think of it as cooking with wine. A good example of this is fondue.
# 4 - Espresso is NOT a bean
Espresso does not refer to any type of bean, it is just a drink. More specifically, it is a type of coffee brewing method. I think a lot of the misconceptions surrounding espresso developed with products like chocolate Espresso Coffee Beans and espresso blended coffees. # 5 - It comes from a cherry.

What most people don’t understand, you’re about to have control over. And it’s going to mean a big improvement for your daily coffee experience.
Essentially, extraction happens when water dissolves and pulls stuff out of the coffee grounds. The first things to be extracted are the bright acids and bitter caffeine; then the oils, sugars, and dissolved solids; and finally the darker-flavored compounds.
The trick is to extract just the right amount of ‘stuff’ so that you land on the sweet spot of flavor harmony. A balanced extraction has a crisp acidity, lots of flavors and aromas from oils and dissolved solids, a hint of sweetness from the sugars, and some darker notes to balance out the bright acids.
Extract too little or too much and the harmony of flavors will give way to an unbalanced mess. We’ll get to that later. First, let’s talk about the main things that impact extraction.
People who brew Fantastic Coffee Beans understand that it’s all about balancing the variables. Each aspect of brewing has to work alongside the others to ensure that the extraction is well-rounded and not too one-sided.
Here are the most important factors that we manipulate to find that sweet spot:
Grind Size – The smaller your coffee grounds, the faster the water will extract things from them. That’s why we grind coffee beans to a smaller size in the first place; otherwise they would take forever to produce drinkable coffee.
Brewing Time – Naturally, the longer you brew the coffee, the more the water will extract from the grounds. For regular black coffee, two to four minutes is typical. For espresso, since the grounds are so tiny, only 20-30 seconds is needed.
Water Temperature – The hotter your water, the more violent the physical changes are during extraction, and the faster extraction occurs. Most people agree that the ideal water temperature range is 195 to 205 degrees Fahrenheit.
Brewing Ratio – The general rule is to use 1g of coffee for every 15-18g of water (or 15-18 milliliters—it’s a direct conversion when it comes to water). Use less water and the brew will end up too concentrated; use more water and it’ll taste watered down.
Practically, these are the main variables you need to worry about. However, you can easily streamline two of these. Just use a water kettle to heat water to a consistent temperature and a kitchen scale to weigh out your coffee and water to ensure you’re using one of the “golden ratios” (1:15-1:18).
That leaves you with only two variables you need to worry about for the most part: grind size and brewing time.
When these variables aren’t aligned quite right, the resulting coffee seems “off”. Sometimes it’s too acidic, sometimes it’s weak and lifeless, and sometimes it has a harsh bitterness. Let’s now look at the two main ways we think about uneven extraction.
When your water extracts too much from the grounds, the resulting coffee is either bitter or dull. The darker notes can overpower all the tasty notes, creating a lifeless or unpleasantly bitter brew.
When your water extracts too little from the grounds, the resulting coffee is weak and overly acidic. Since the oils, dissolved solids, and other things aren’t extracted, the acids have nothing to balance them out, making the coffee sour.
Once you’ve identified whether your unbalanced coffee is over or under extracted, you can figure out what you need to do next time to fix the problem. We suggest adjusting one variable at a time to avoid accidentally over-correcting.
Since you either brewed the coffee for too long or used too fine of a grind size, you need to pull back on one of those variables. Try a coarser grind setting or reducing the brew time by thirty seconds or so.
If you’re using a french press or another immersion brewer, the simplest option is to reduce the brew time. If that doesn’t work, then adjust the grind to a coarser setting.
If you’re using a pour over brewer, you can either coarsen the grind a little bit (which also reduces the total brew time because there’s less flow resistance), or you can literally pour in your water faster to speed up the draining time.
Here, you didn’t extract enough, which means your grind size was too coarse or you didn’t brew for long enough. Try adding thirty seconds or so to the brew time or a finer grind setting.
If you’re using a french press or another immersion brewer, try adding some time to the brew. You don’t really want to grind too fine or you risk clogging your filter (at least, if it’s metal).
If you’re using a pour over brewer, you’ll want to either try a finer grind setting to slow down the draining or try pouring your water slower and more evenly to extend the brew time.
If you follow through and take the time to diagnose and troubleshoot your coffee when it isn’t quite right, you’ll find that your future brews will be far more delicious than ever before. Sure, it takes a minute or two to think through the problem, but the end result is cafe-quality coffee that really gets your day started on the right foot.
These principles apply to all coffee, but if you’re starting with low-grade beans, you won’t really see much improvement. Instead, start off with specialty-grade coffee beans to ensure that the best possible flavors are available to be unlocked by a balanced extraction.
